Once again the Super Bowl is upon us—and who can wait?! And, even though I lost out on both of my fantasy league playoffs this year (ugh!), I can still get onboard with game day eating. Whether you’re hosting, attending a party, or laying low this February 1, stick to your New Year’s resolution with these healthier game day snacks.

 

Roasted Buffalo Cauliflower Bites with Blue Cheese

Ingredients:

Cauliflower

Olive oil

Salt + pepper to taste

Buffalo seasoning

Cayenne pepper

Blue cheese for dipping

Preheat oven to 375 degrees.

Prep:

Wash cauliflower and cut into bite-sized pieces. Toss cauliflower florets in 2 T olive oil. Salt and pepper to taste. Season with buffalo seasoning. Place on unlined baking pan and bake 30 minutes. Serve with blue cheese dressing.

 

Baked Jalapeno Poppers

Ingredients:

Jalapenos

Cream Cheese

Shredded pepper jack

Shredded sharp cheddar

Preheat oven to 350 degrees.

Prep:

Slice jalapeno peppers length wise. Scrape and clean out seeds. Combine cream cheese, shredded pepper jack, shredded sharp cheddar. Fill peppers with cheese mixture. Place on unlined baking sheet. Bake 25 minutes. Take out of oven. Top with shredded cheese and bake for another 5 minutes.

 

Turkey Meatballs with BBQ Sauce

Ingredients:

1 lb. ground turkey

1 egg

Bread crumbs

Salt and pepper to taste

BBQ Sauce

Preheat oven to 375 degrees.

Prep:

Combine ground turkey, egg, bread crumbs, and seasoning in bowl. Roll into two-inch meatballs. Place on lined baking sheet. Bake 45 minutes. Coat with BBQ sauce.

 

Homemade Guacamole

Ingredients:

2 avocados

Tomato

Onion

Garlic

Prep:

Cut open avocados and take seed out. Scrape avocado out of its shell. Smash avocados in a bowl. Combine tomato, onion and garlic with avocados. Salt and pepper to taste.
