When it rains, just pour! That’s the motto for Beresford’s Rainy Day Coffee Co.
The company was founded by owner Shania Rozeboom to “shower” their corner of southeast South Dakota with good vibes, retro flair, and great coffee.
“I had learned to roast coffee back in college when I worked for Watertown Confectionery,” recalled Rozeboom. “When my husband and I moved back to our hometown, I realized no one in the area roasted coffee in the style that I loved: the nutty, buttery, classic roasts.”
The locally-roasted coffee business launched in 2019 as Rozeboom’s side hustle alongside her full time career.
“After roasting on the side for a few years, I missed putting it in a cup, and we started to search for a mobile option,” said Rozeboom. “In January of 2021 we found an old 1981 Step Van in the middle of Nebraska that was an old ice cream truck.”
From January to May of 2021 they built Lucille— ”coffee on wheels.” Lucille became so popular that in March of 2023 Rozeboom quit her job and jumped into Rainy Day Coffee Co. full time.

WHAT IS RAINY DAY COFFEE CO.’S VIBE?
We tend to be sweet and sassy. Pretty early on in the truck years, I realized you have to be able to roll with anything, and most places we would go to are fun events where people are there to have a good time—I wanted their experience with us to be an extension of that. I always wanted the girls’ personalities to shine and not be shy, so I encouraged them to be fun by having fun behind the scenes and joking with each other.
HOW HAS RAINY DAY COFFEE CO. GROWN SINCE THE LAUNCH OF LUCILLE?
In November 2023 we purchased an old gas station downtown Beresford in order to turn one side into a garage for Lucille (cause she’s not going anywhere) and a roasting/ packaging area on the other. Since the other side was big enough and it already had a drive-thru window, we thought we’d try a drive thru and coffee bar, too! We officially opened that in November of 2024 and added grab-and-go breakfast, a bigger espresso machine, and a larger-sized cup.
TALK ABOUT YOUR ROASTING PROCESS.
I’m more of a small batch roaster and produce about 20 pounds an hour. You can typically find me roasting about twice a week, and now I love that I get to show people the roasting process as it’s happening. Not many people have ever seen a green coffee bean before, so first I show them what it looks and smells like, and then I explain to them how it changes during the roasting process to become the roasts you’ve come to love.
WHAT ARE YOUR FAVORITE ROASTS?
My first favorite roast is 2 a.m. Diner—Guatemala beans roasted medium. It’s your classic brew you can have at any time with anything. But my other favorite is Classy Chassis—Burundi beans roasted lighter, giving it a nice body with graham and brown sugar notes. My top favorite groovy latte I make at the station is Happy Daze—butter cookie with vanilla foam and sea salt on top. Our most popular at both places is our Nutty White Girl—hazelnut and white chocolate. It’s witty and delicious!
WHAT IS YOUR FAVORITE PLACE IN SOUTH DAKOTA?
You know that moment in time just before the sun rises and the whole land is black, the trees in the horizon are silhouettes, the sky is yellow gold to the deepest blue, and the stars are still bright in the sky? I can walk out my front door in the country and it halts me, and it’s moments like that where I love and appreciate this place we live.
