Chef Kristina Kuehn has made her mark on the Sioux Falls dining scene with her made-from-scratch gourmet bistro-style menus. At K Restaurant, she is bringing her style of contemporary Americana to the business lunch and weekend dinner crowds with weekly, seasonal specials. In the December issue, she shares two of her favorite holiday party recipes – a simple cocktail called the French Bellini and a variation on bruschetta with white bean puree, feta, and pomegranate seeds.

“What’s nice about bruschetta is you can do it ahead of time. I think it’s always so fun to make different variations and make them look so festive. I like ones that look nice and hold their flavor as they sit out at a party.  I do some sweet, some savory, always appealing and colorful.”

Here, the longtime Sioux Falls chef and caterer shares a few more easy, beautiful bruschetta recipes.

 

Pimento Cheese and Bacon

Mix together:

– 4 oz shredded sharp cheddar cheese

– 4 oz shredded white cheddar cheese

– 1 clove finely chopped garlic

– 1/2 tsp chopped jalapeno

– 2 T chopped red bell pepper

– 1/4 C chopped scallions

– Pinch paprika

– Salt and pepper to taste

– Optional cayenne pepper to taste

– 1 tsp chopped parsley

– 3 T mayo

– 3 T sour cream

Assembly:

– Place on bruschetta base and top with chopped cooked bacon.

– Warm in 350 degree oven for 4-6 minutes.

 

Pear and Gorgonzola with Toasted Pecans

Assembly:

– Use bruschetta base and top it with thinly sliced pears (or apples).

***If you’re not using right away, toss slices in a little lemon juice so they don’t brown.

– Top pears with crumbled gorgonzola (or blue) cheese and toasted pecans.

 

Steak and Horseradish Creme

Mix together:

– 2 T horseradish

– 2 T sour cream

– 1/2 tsp chopped fresh rosemary

– 1/2 tsp black pepper

– pinch of salt

Assembly:

– Cook your favorite piece of meat (ribeye or tenderloin) to medium or medium rare and slice thin.

– Place slice of meat on bruschetta base and dollop horseradish/sour cream mix on to.

– Garnish with fresh rosemary sprig and some black pepper.
