Originating in Clark, the Tasty Trolley food truck wasn’t getting the love it clearly deserved. Kelli Ritter and her husband decided to take a chance and buy the food truck from her father-in-law. Now residing in the Brandon/Sioux Falls area, the Tasty Trolley offers more than 40 flavors of soft-serve ice cream, super nachos, and the ever-so-popular walking tacos. 605 had the opportunity to get inside the food truck and preview the Ice Cream Cookies that will be one of many options at the 605 Summer Classic.

ICE-CREAM COOKIES

Ingredients

¾ Cup Brown sugar

¾ Cup Sugar

1 Cup Softened unsalted butter

2 Eggs

1 Tsp. Vanilla

½ Tsp. Baking soda

½ Tsp. Baking powder

¼ Tsp. Salt

2 ¾ Cups Flour

2 Cups Semi-sweet chocolate chips

Directions

Preheat the oven to 350 degrees and mix the sugars and butter until creamy.

Mix together the eggs, vanilla, baking powder, and baking soda. Then add flour, followed by chocolate chips.

Use an ice-cream scoop to get the perfect size cookies, then place cookies four inches apart on a lined pan.

Bake for 12 minutes, or until light brown. Freeze on a flat surface for 30 minutes.

Add Tasty Trolley soft-serve vanilla, or your favorite ice cream, and place in freezer for another 30 minutes.

BRAZILIAN SLAW

Ingredients:

1 Cup Shredded kale

3 Cups Julienne kohlrabi

1 Cup Shaved brussel sprouts

1 Cup Minced carrot

1 Cup Chopped radicchio

½ Cup Sliced red pepper

¼ Cup Diced onion

1 Tbsp. Minced garlic

3 Tbsp. Fresh squeezed lemon juice

1 Tbsp. Minced cilantro

¼ Cup Olive oil

Salt and pepper to taste.

Directions:

Combine all ingredients and mix well. Refrigerate for two hours.

FIRECRACKER CHICKEN SKEWER

Ingredients

2 Pounds Large diced chicken breast

1 Cup Lime juice

¼ Cup Vinegar

¼ Cup Paprika

1 Tbsp. Cayenne pepper

¾ Cup Canola oil

2 Tbsp. Red pepper flakes

2 Tbsp. Minced garlic

1 Tbsp. Chipotle pepper paste

Salt and pepper to taste

Directions

Mix all ingredients in a bowl and add chicken. Mix vigorously. Cover and refrigerate for four hours.

Skewer and grill.

PICANHA SKEWER

Ingredients

Large diced Picanha Beef

Sea salt

Directions

Season beef with salt.

Skewer and grill.
